- ½ pound elbow macaroni
- 2 cloves of minced garlic
- 2 cups of frozen spinach (thawed)
- 3 tablespoon butter
- 3 tsps of flour
- 3 cups milk
- ¼ cup grated mozzarella cheese
- ¼ cup grated cheddar cheese
- 2 tsps of grated parmesan cheese
- Salt and pepper, to taste
- Red pepper flakes, to taste
- 1 cup breadcrumbs
Spinach Mac ‘n Cheese, a creamy, cheesy dish full of taste and aroma.
Directions:
- Preheat oven to 350 degrees F.
- Boil macaroni in salted water.
- While macaroni is boiling, in a separate pot melt butter and add garlic. Till you see the amazing aroma coming out of it.
- Whisk in the flour for about 5 minutes.
- Stir in the milk.
- Add cheeses in the mixture, whisk.
- Make sure the mixture is lump free.
- Add the spinach and combine well. Season with salt, pepper and red pepper flakes. When the sauce tastes amazing, add the elbow macaroni. Delicately fold the sauce into the pasta until all is well mixed.
- Pour into a glass baking dish.
- Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes, until the breadcrumbs turn a golden brown.
- Serve it with steamed vegetables or salad.
