• 1.5 kg chicken cut into halves
  • 1 cup olive oil
  • 3 tbsp dijon or mild mustard
  • 3/4 cup lemon juice
  • 10 crushed garlic cloves
  • 2 tbsp salt
  • 1 tbsp white (or black) pepper
  • 2 tbsp tomato paste
  • 4 tbsp finely chopped thyme or 2 tbsp dried thyme
  1. Whisk well a little bit of olive oil into the mustard.
  2. Add and whisk the lemon juice, salt, pepper, tomato paste, garlic and thyme until well mixed.
  3. Marinate the chicken in the sauce overnight in the fridge.
  4. Skewer the chicken and barbeque or grill until done.

NOTE:  Don’t overcook otherwise the chicken would dry out.
